There are two casinos in Nova Scotia. I cannot speak to Sydney, having never travelled there, but it is rumoured they have four tables, only two of which are ever opened. I believe they offer six deck games.
In Halifax they have four or so deeply dealt CSM games. Table limits are $5-$200 or so and they deal 1 - 1.5 decks out of 6 before putting the cards back in the CSM. Rules are H17, DAS, DA2, no surrender. This is obviously a very poor game, but it is possible to beat using strictly back counting.
In their high limit room they offer a 6 deck H17 with okayish pen - 2 or 1.5 decks cut off. It is fairly crowded. They also offer a mostly deserted H17, D1011, NDAS double deck game. This is one of 3 (three) double deck games in Canada that I am aware of. The other two are in Winnipeg. The limits are $50-$500 and there is no mid shoe entry. Mid shoe entry is available in their 6 deck game. Pen in this game ranges from 50-65%ish, dealer dependent. As this was my first time playing it was tough for me to say, but I was pleasantly surprised at how deep it got sometimes.
Casino Montreal :
The games here are bad, but there are a ton of them. H17 8 deckers as far as the eye can see. Back counting is a snap and there are lots of spots where you can back bet. Of course no one plays basic strategy so it is risky. I recommend back counting two tables at once to make up for that crappy pen - 2 to 3 decks cut off. The first high limit room is H17 6 deckers, just higher limits. Might still be 8 deck but I think it is 6 deck. $50-$2000 no mid shoe I think. By my third day they half shoed the entire casino to get rid of me. Really kind of amusing, and didnt even work because there were always a few dealers who didnt half shoe it and so many games to choose from.
Casino De Charlevoix
The games are a little better here. 8 deck H17, with decentish pen - 1.5 to 2 decks cut off. Good limits - max $500, min $10 or $15. Not tooo crowded. Not many tables - 3 or so. The high limit room is nice, $25-$1000, NMSE, S17. Normal good shoe rules. Pen is decent enough, 1.5 or 2 decks cut off. They also have $50-$1000 and $100-$2000. You can also get a private $100-$2000 game opened in the back room, but after I did this they used counter measures on me - half shoed. Beautiful area and lots of skiing nearby.
