Open card shuffle shoes

Hello,
Have just begun getting into blackjack, and wanting to go to Vegas.. Now, I have begun working at understanding strategies and card counting but was told that most, if not all bj tables in Vegas have card shoes that are closed (hidden from view) or they shuffle after every pack or so, meaning your true count is very much a guesstimate at best??? Is this correct??

I think most estimate the discard tray to determine how many decks are yet to be played.

Sorry for my ignorance, but do they let discard pile build up to a rough/approximation, say roughly 1 or 2 decks discarded from a deck of 8 on a table?? I hope this makes sense? Your true count will then be very much of a guess then?

I know that when they cover the shoe, u as the gambler have no idea what is left, is it 1 deck, 3 decks or more, as they also reshuffle constantly.. Is this correct??

Sorry for asking very basic and most probably boring questions.. I am really enjoying learning the game, and counting and strategies, just want to mnake sure I can put it into play in a few months?

All cards are either in the shoe, in the discard, or in play.
If you know the number of cards in the discard, and the number of cards in play, you know the number of cards in the shoe.

Coverings

Last time I was in Las Vegas, I noticed in one of the Evil Empire's properties that the discard tray at a shoe game was covered. The dealer had to slide the discards through a slot on the top. Haven't seen that anywhere else, but I heard some midwest casinos also have it. Time to learn an unbalanced count?

Can you mention which Evil Empire casino did this? I am not familiar with this in Vegas, although, admittedly I play and check conditions infrequently at some Caesar's stores.

I know a couple places like Parx back east, intially were doing this, but then went away from it. Removing the cards from view seems like a very bad idea to me. .

With removing the cards from view like this, or introducing pre-shuffled cards, like some casino are now doing, (mostly indian casinos) when a player, and I don't necessarily mean advantage player, just a regular player, suffers through a few losing sessions, his suspicion will get the best of him and he starts thinking he is being cheated. Once players start questioning the integrety of your game, that seems like a hard thing to overcome.
