Card Counting at Live Online Blackjack

I noticed some online casinos provide Live Blackjack games in which you see in real-time a dealer deals the cards live through camera.

These games do not shuffle the cards after each hand as usual online Blackjack games do.

Assuming it's fair and not rigged, does it mean that Card Counting could be applied in these games? Sounds too good to be true?

It's even better than land-based casinos in that you can use paper and pencil!

Yes, it appears that these games could be attacked via card counting. I tried them briefly, but I found the pace so slow that it was annoying. That was more than a year ago, so I should probably try them again to see what it's like today.

Penetration was still pretty low, and when I played the shoes were not shuffled on-camera which seemed odd. If you're going to the trouble of having live video to increase the player trust factor, why bring in cards shuffled behind the scenes?
