They have tall tables which make it difficult to count from long distances. any suggestions?

There are TWO types of wonging - classic or conventional wonging means entering the game on a +count. The other type more suited for your available games is called reverse or exit wonging - leaving the shoe when it hits a certain minus count, typcally -1 or -2 (true).
One way you can create the best of both worlds is with a cell-phone (do they work at sea?) - when the count drops to your departure point, take an imaginary call but stay close and keep counting - if it rises sufficiently to warrant your return, tell the caller "gotta go!" and jump back in. zg
