Santa Ysabel -- considering mid-week pickup tourney, looking for feedback

Santa Ysabel is considering a mid-week (tues or wed) pick-up (think SnG for poker) tournament where all buy-ins would be returned via pay-outs. And the buy-ins would be small stakes compared to their regular 24 person limited tournament on Sunday (6deck) and Thursdays (double deck) which are $35 each. And the House makes up the shortfall on those two, but would not on this new one.

This game would be single deck, played at about 12 hands a table so that there could be more than 24 people in the first round...played faster. Probably short stacked and smaller chips with a max-bet per hand (other two tourneys have no max limits).

The real question is how interesting is this to an average player? What additional structure would be needed to get more players involved?
