At one spot, Almost every 15-20 minutes , I could see the PB scanning every player's stack and noting down something - obviously our chip value. Not sure if it is specific to this store or it is common.

One of the floor person's main duties is verifying cheque transactions and keeping track of the dealer's inventory. Notice how many times a floor person comes to the table and looks at the dealer's chip rack and takes notes? They also want to know what the players' wins and losses are, a way to balance the books, so to speak, as well as to keep track of what players are up to. All casinos do this in some form or another

They also do this to determine if a dealer is stealing or not. The patrons aren't the only ones who can leave with chips.

This is not unusual at all. Most at least record your bet, probably record your stack too at any given point.

Ratholing shouldn't be an issue, unless you rat hole huge amounts at once. After a bad run, I had a floor person question what happened to all my money, pfft, I told them the truth, I lost it. They cant be sure if you actually lost it or ratholing.
