Ah. Online. Been more effective for me so far, partly because the advantage is bigger for modest bankrolls, and partly because it's something I can do at home in my underwear (picture it!)
Yeah, it's doable. I'm up over $6k in about 5 months. My initial deposits were a couple hundred dollars, but a few months ago I withdrew all of the "real" money, so now I'm just playing with winnings.
The most important thing: You have to be very good at following rules at the casinos, and the terms and conditions can be very confusing. I think failure to follow rules has cost me at least $2000, and that was only from three cases where I made a mistake.

Now, your strategy of finding a positive expected value bonus, and grinding it out with as small of bets as you can possibly stand, is perfectly valid, and it's pretty much what I did.
However, in perfect hindsight, when I was hitting up casinos for the signup bonuses (And back when US players could play everywhere), if it was truly to willing to risk more money (like $2000), then I would have played every bonus -
every bonus aggressively, and bet nearly all of it on one bet, to attempt to double the balance, before grinding it out. It would have saved time, and over the long run, it would have earned me more from the bonuses (probably at least $1000, cumulative).
With a $2000 starting bankroll, I would play aggressively on any bonus where I risked $100 or less, and save bonuses that required larger deposits for later. Again... this is all in hindsight. Currently, I try to triple all of my bonuses (in some cases, 4x). Eventually I'll probably do 4x for everything.
