Nearly all BS charts indicate to double "eleven" versus ANY dealer up-card if the dealer hits soft 17's (don't double against an ACE if the dealer stands on soft 17's).
Blackjacks are not usually doubled because the additional return is not enough to justify the risk. However, a Natural is an eleven so I would say that if you are going to base your decision on probabilities, your Natural would have the same probabilities according to Basic Strategy as any other "eleven".
