I was wondering about this too. One table I was at was winning waaay more on these bets than normal blackjack.

Do you mean if a new dealer comes in in the middle of a shoe? Unless the deck itself changes, then yes, that new dealer will be "hot." Blackjack is in the cards, not the dealers.

In the long run, it shouldn't matter. After all, you don't know what the next card out of the shoe would have been.

Wouldn't antifragility in this case simply be an insane rainbow room?
