For optimal betting and considering time and motion considerations it's 1 hand when heads up, one hand with others at the table in unfavorable counts and 2 hands with others at the table in favourable counts.

That's the theoretical answer. Of coarse practical considerations are also at play.

I generally like to always play two hands. Sometimes if you are at a table with a really low table max playing more than two hands can be fun.
