Optimal Bet Sizes vs Average Bet Sizes

I'm curious about people's thoughts on this.

Here's an idea for cover:
You know that the optimal bet size at TC + 4 should be 8 units, let's say.

So why not do 3 units 1 time it's +4, 13 units another time it's +4, etc. etc. etc.

My thinking is that as long as it averages out to the optimal bet size of 8 units it could be a cool idea for cover.

However, the variance would undoubtedly increase by doing this, but the EV shouldn't be affected at all.

Correct? Thoughts? How much would the variance increase in this scenario?

You can do that. And yes, the variance would therefore increase. However, remember that because the variance is increased, the kelly bet would also decrease, resulting in a less profitable game. How much cover you want to use is at your discretion depending on your goals.
