Camoflauge is important to any counter, but what would be considered a good way to deal with a PB who has come to the table and has started to backcount through the dealt cards? Obviously you've been made at that point, but walking away at that point basically confirms their suspicions, right?

I've had this happen. The first time they count the discards, they are just checking. Now here is an opportunity to mess with them. Next deck, start reverse spreading. Sure, it costs you money. But you will be able to tell by his behavior when he is convinced you are not counting, and then you can really go ape on them with a spread. Just one opinion, I'm sure others here have other ways of dealing with that.

Not as obvious as you may think
You very well may be correct but the pit could be looking for bent or marked cards also. Then there is the bored pit who goes through the cards mindlessly for something to do.
When this happens, if I am at third base (next to the discards) I will engage him in conversation. Often, since he is looking at the cards, I will ask him if he has a 9 in there for me for instance if I have 12. Then with the next hand, since the count might be fresh in his mind, I make a bet that has nothing to do with the count and for the next couple of hands will look like some kind of progression player.
You are much better off talking with him, joking with him than getting up and running for the door. Many pits really do not know the basics of counting but know how or think they know how to rattle a suspected counter.
