Counting down a table from a distance and only entering the game when the count is in your favor or at some other predetermined point.
Many places have no mid shoe entry or restrict mid shoe entry bet levels so it won't work everywhere.
As for heat, it sure will if they notice what's going on or if you continue to do it in the same pit on the same shift. If you're good and look casual, things are busy in the pit, or lots of people mulling about then it's not too hard to pull off.

I posted this same question maybe a year ago. It seems like it would be very obvious what you're doing.
However lots of people just stand around and watch so really its not that big of a deal. I always try to pretend i'm texting people or using my phone or doing something else and not just watching every card come out.

Bring a girl to make out with! You can backcount one table and she can backcount the other, and being you are making out people will be embarrassed to watch you.
Yes it can bring heat if overdone, but the alternative - spreading your bets - can easily bring even MORE heat if one is not very careful. Kind of reminds me of the hypothetical question we used to ask each other when we were kids - "Would you rather be shot or hung?"
In my experience back-counting does bring somewhat less heat; and it's usually easier to SPOT the heat before it's too late. As you're walking around the pit, if you notice (out of the corner of your eye, of course) the bosses heads turning and following your every move; it MAY be time to pull up.

Its not that obvious, if you do it with a bit of stealth and your bet size is not exciting (to them).
I call it 'stalking the wild shoe.'
First you wong in, bet for as long as feasible, then wong out. zg
Do it 1 time per pit per shift and you won't get any heat. If you keep doing it in the same pit then you'll get attention. If you do something like Wong in then stand up and watch that same table then you're an idiot.
At the minimum switch pits between shoes so you're gone for like half an hour and the PCs will more or less forget you

If you've in Vegas or AC, who cares? Wear a hat, never give up your ID, and if they sweat you or you get backed off, just leave. You can come back the next day if they don't know who you are.
The whole point of back-counting is it's hard to catch you, and even if they do, they can't do anything.
I'm assuming you're not betting more than maybe a couple hundred...If you get caught back-counting with bets of $10k, things may get dicey...
