Of course the cards are randomized by the shuffle and of course there is no mathamatical or other principled basis for preferring in advance one random card of out of the shoe or the next (or following) random card from the shoe. This explains why cutting, mis-dealing or playing a hand "wrong" does not impact the odds of hands of winning or losing the hands that follow. Simple.
However, I think casinos change dealers just because they're as superstitious as ploppies.

I love those speed demons they put on you. Nothing improves my concentration more, and it lends a certain enjoyment to the game similar to Errol Flynn sword fighting with those inferior swordsmen of the king! En Garde! But I hate it when they put one of those ugly, hateful card slamming fools who only serve to take all the pleasure out of the game. Of course, nothing is quite so satisfying as a card slamming bust out artist who loses every hand! Now that is sheer joy... if you can take his bad breath, underarm odor and toothy grin/grimace.
