It is possible, but unusual. Next time you go to the casino, just backcount for an hour. Keep track of the number of shoes that go positive and the number that go negative. If things don't seem to add up, then cheating is something to worry about.

The dealer peeks at his first card, which in most casinos will be his up card, and if he does not like it he turns his second card as his up card instead of his first.
