When to hit up a table...

I'm understanding more and more of what card counting entails. However, I'm kind of stuck on when to start playing at a table. Do counters just look for when a new shoe begins to start playing at that particular table? Do counters sometimes come in during the middle of a shoe? Obviously I can't just jump in when I don't know the count.

Obviously I can't just jump in when I don't know the count.

Come in on the new shoe, slipper, or jump in on a positive count mid shoe, if allowed.
