Actually, I believe it is optimal to just play 1 hand heads up vs the dealer, but it also depends on how much money you can get on the table with 1 hand vs 2 hands.

The true count is to determine the average richness in the remaining decks. No need to divide by the number of cards, just use the remaining decks. For example, running 10 and 1 remaining deck would give you a TC 1. If you try to use the number of cards, you'd get 10/52 or .19

Keep working on counting down your deck, should be less than 30 seconds. But, more importantly is actual play. Counting down a deck one card at a time has a much different feel than dealt hands that are played, so make sure you work in a live-type practice environment too.
